1 tbsp olive oil
1 small onion, diced
10 oz cremini or your favorite mushrooms, sliced
1 garlic clove, minced
10 eggs
2/3 cup half and half
¼ cup fresh chives, minced
2 tsp fresh thyme, minced
½ tsp kosher salt
½ tsp black pepper
4 oz goat cheese


  1. Preheat the oven to 375°F.
  2. Heat the olive oil in an oven-safe skillet over medium heat. Add the onion and sauté for 3-5 minutes until golden.
  3. Add the mushrooms and garlic then continue to sauté for 10-12 minutes until mushrooms are golden brown.
  4. Mix the remaining fixings, except for the goat cheese, in your large bowl.
  5. Add the goat cheese and egg mixture over the mushroom. Mix it well and cook 10 minutes over medium heat.
  6. Transfer the skillet to your oven and bake 8-10 minutes. Let it cool completely before slicing.
