Ingredients:
1 pound ground lamb
½ tsp salt
½ tsp freshly ground black pepper
4 tbsp feta cheese, crumbled
Buns for serving (optional)

Directions:

  1. Preheat a grill, grill pan, or lightly oiled skillet to high heat.
  2. Using your hands, combine the lamb with the salt and pepper in a large bowl.
  3. Divide the meat into 4 portions. Divide each portion in half and flatten each half into a 3-inch circle.
  4. Make a dent in the center of one of the halves and place 1 tbsp feta cheese in the center.
  5. Place the second half of the patty on top of the feta cheese and press down to close the 2 halves together, making it resemble a round burger.
  6. Cook the stuffed patty for 3 minutes on each side for medium-well. Serve on a bun, if desired.
